Grown in Mengku County of Lincang, in a place called “Tofu Village,” this lovely tea is made from a local varietal which is a hybrid of pure Assamica and Chang Ye Bai Hao.
Picked and processed between March 4th and 7th of 2018, this lot was fried by hand in a wok, rolled, wilted very briefly and then dried by hand, again in a wok. The finished product is a silver and green needled tea that locals call Song Zhen or Pine Needles. This is our second year purchasing this tea from this particular producer, and once again we are intoxicated by its depth of sweetness and umami character. A perfect daily drinker.
- Brewing Notes
- Using 175°F water, steep 1/2 gram of leaf per ounce of water for 1-2 minutes. For each successive infusion, add 10-20 seconds to the steep time.
