Grown along the coast in China's Fujian province. Bad Mudan translates literally to White Peony and is one of China's famous white teas. This class of teas undergoes minimal processing which involves simply plucking one or two young leaves and a bud (in this case from the Fuding Da Has cultivar) and air-doing. Some natural oxidation occurs during the withering which leads to production of the plush stone fruit qualities found in the cup and the delicate florals found on the nose.
Brewing Method
Using 180°F water, steep 1 gram of leaf per ounce of water for 3 minutes. For each successive infusion, steep at least 4 minutes.
