A beautifully structured coffee, Edilma’s competition lot offers inviting aromas of cocoa, mild florals, pear, and marzipan. In the cup, juicy pineapple acidity and flavors of kiwi and apple are anchored by a sweet, pleasantly coating, base note of milk chocolate.
Edilma Bermeo is one of the founding members of the Divino Niño producer group and currently serves as managing director. This beautiful coffee from Edilma’s farm, Finca Las Brisas, was awarded 6th place at the inaugural Copa Suaceña: a regional cupping competition organized to highlight the very best coffees produced by individual members of two producer groups in southern Huila, Colombia that Passenger has been buying from for the past two years.
Edilma produced this coffee on her 3.5 hectare farm: Finca Las Brisas. She was one of the founding members of the Divino Niño producer group and currently serves as Managing Director. Her competition lot was fermented in cherry for 36 hrs after harvest before being pulped and undergoing 12 additional hours of dry fermentation. The coffee was dried on a parabolic (covered, shaded) drying bed for approximately 20 days.
