Dong Ding, literally "Frozen Peak," is a mountain located in Nantou, Taiwan. The first tea in Taiwan was cultivated on Dong Ding mountain which, to this day, continues to grow some of Taiwan's finest teas.
This classical Dong Ding lot was produced in the spring of 2018. It was grown at 800 meters above sea level and is made from the Qing Xin cultivar. Before export the tea was carefully roasted to a fairly heavy degree, the result of which is an intensely sweet, caramelized character in the cup. This tea is incredibly enjoyable now and will also age very well.
