Release #16: Gustavo Paredez 2017
This beautiful archival selection was produced by Gustavo Carcasi Paredez, a member of the Inambari Cooperative, one of the top cooperatives in all of Peru. Gustavo's farm, Chillemani, is located in the village of Pacaysuizo in the district of Alto Inambari, in Puno. Puno is a relatively familiar region to us at Passenger, owing to the fact that producer Ciriaco Quispe, also from Puno, was part of our starting lineup in 2014 and has returned to the menu as a crowd favorite on many other occasions ever since.
All of the members of the Inambari cooperative are small in terms of landholding, with an average farm size of 2.5 hectares. The coffee is usually picked by the farmers themselves. If more hands are needed for harvesting, neighbors are sometimes employed. Coffees from Gustavo's farm are processed in a way that is quite typical for farmers of this community. Coffee is depulped using hand cranked machines, fermented in concrete tanks, and washed in the same tanks. Gustavo’s coffee is then dried on raised beds.
This particular lot was harvested between August and October of 2017, landed in the States the second week of January, 2018 and was placed in deep freeze storage the second week of February, 2018. After enjoying a popular stint on the Reserve Lot menu the final few pounds of green coffee remaining were kept "in repose" in Passenger's frozen archive of notable harvests. We are incredibly proud to share our last roast of Gustavo's stellar 2017 harvest at the present time.
