A member of the legume family and native to South Africa, the needle-like leaves of the Rooibos plant are green before undergoing oxidation. This process, biochemically similar to the oxidation that certain teas undergo during processing, produces a deep-red liquor replete with Vanilla and citrus qualities.

- Using 212°F (boiling) water, steep 1 gram of leaf per ounce of water for 5 minutes.
